Potato Meatballs & Cheese Bake

Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 lb (450 g) ground meat (beef, chicken, or turkey)
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 egg
  • ½ cup breadcrumbs (optional, for binding)
  • Salt & pepper, to taste
  • Optional seasonings: garlic powder, onion powder, Italian seasoning

Instructions

  1. Preheat oven to 190°C / 375°F.
  2. In a bowl, mix ground meat, egg, breadcrumbs, salt, pepper, and seasonings.
  3. Form small meatballs and place them in a greased baking dish.
  4. Spoon mashed potatoes over and around the meatballs.
  5. Sprinkle cheese evenly on top.
  6. Bake 30–35 minutes, until meatballs are cooked through and cheese is bubbly and golden.
  7. Rest 5 minutes before serving.

  • Add a layer of tomato sauce or gravy before the cheese.
  • Mix cheese into the potatoes for extra creaminess.
  • Use leftover roast potatoes, mashed roughly.
