Ooey Gooey Bars

Here’s a classic Ooey Gooey Bars recipe—rich, buttery, and very gooey 😋

Ooey Gooey Bars (Gooey Butter Bars)

Ingredients

Crust

  • 1 box yellow cake mix
  • ½ cup (1 stick) unsalted butter, melted
  • 1 large egg

Filling

  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (1 stick) unsalted butter, melted
  • 3¾–4 cups powdered sugar (adjust for gooeyness)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Make the crust:
    Mix cake mix, melted butter, and egg until combined. Press evenly into the bottom of the pan.
  3. Make the filling:
    Beat cream cheese until smooth. Add eggs, vanilla, and melted butter; mix well. Gradually beat in powdered sugar until smooth and thick.
  4. Assemble:
    Pour filling over the crust and spread evenly.
  5. Bake for 35–45 minutes.
    The edges should be set, but the center should still jiggle slightly.
  6. Cool completely before slicing (important for that gooey texture!).

Tips & Variations

  • Extra gooey: Use closer to 3¾ cups powdered sugar and slightly underbake.
  • Chocolate version: Use chocolate cake mix for the crust.
  • Lemon: Lemon cake mix + add 1–2 tbsp lemon juice to the filling.
  • Pumpkin spice: Spice cake mix + ½ cup pumpkin purée + 1 tsp pumpkin spice in filling.
