No-Bake Chocolate Peanut Butter Balls

Ingredients

  • 1 cup creamy peanut butter
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1½–2 cups powdered sugar (to taste/consistency)
  • 2 cups semi-sweet chocolate chips
  • 1–2 tbsp coconut oil or shortening (for smooth coating)

Instructions

  1. Mix the filling:
    In a bowl, stir together peanut butter, melted butter, and vanilla.
    Gradually mix in powdered sugar until the mixture is thick and rollable.
  2. Form balls:
    Roll into 1-inch balls and place on a parchment-lined baking sheet.
    Freeze for 20–30 minutes until firm.
  3. Melt chocolate:
    Microwave chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  4. Dip:
    Dip each peanut butter ball into the melted chocolate. Return to parchment.
  5. Set:
    Refrigerate until chocolate is firm (about 20 minutes).

  • Crunchy: Use crunchy peanut butter or mix in crushed graham crackers.
  • Healthier twist: Use natural peanut butter + maple syrup instead of powdered sugar.
  • Decorate: Drizzle with white chocolate or sprinkle sea salt on top.
