Strawberry Cheesecake Chimichangas

Here’s a fun and delicious Strawberry Cheesecake Chimichangas recipe 🍓🧀—crispy on the outside, creamy and sweet on the inside.


Ingredients (makes 4–6 chimichangas)

Filling

  • 8 oz cream cheese, softened
  • ½ cup strawberry jam or fresh strawberries, chopped
  • 2–3 tablespoons sugar (adjust based on sweetness of strawberries)
  • ½ teaspoon vanilla extract

Chimichangas

  • 4–6 flour tortillas (large)
  • 2–3 tablespoons butter, melted (for brushing)
  • Optional: powdered sugar or strawberry sauce for topping

Instructions

  1. Preheat oven
    • Preheat to 375°F (190°C).
    • Line a baking sheet with parchment paper.
  2. Make the filling
    • In a bowl, mix cream cheese, strawberries (or jam), sugar, and vanilla until smooth.
  3. Assemble chimichangas
    • Place 2–3 tablespoons of filling in the center of each tortilla.
    • Fold in the sides and roll tightly.
    • Place seam-side down on the baking sheet.
    • Brush tops with melted butter for crispiness.
  4. Bake
    • Bake 15–20 minutes, or until tortillas are golden brown.
  5. Serve
    • Let cool slightly.
    • Dust with powdered sugar or drizzle with strawberry sauce before serving.

Tips & Variations

  • 🍓 Use blueberries or raspberries instead of strawberries.
  • 🍫 Add chocolate chips to the filling for a chocolate-strawberry twist.
  • 🥄 For extra indulgence, serve with a scoop of vanilla ice cream.
  • 🔥 For crunchier chimichangas, fry in oil instead of baking.
