Here’s a rich, ultra-creamy Pecan Pie Cheesecake that layers buttery pecan pie filling over a classic cheesecake base. It looks impressive but is very doable — perfect for holidays or special occasions!


🥧✨ Pecan Pie Cheesecake

INGREDIENTS

Graham Cracker Crust

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • 6 tbsp melted butter

  • ½ tsp cinnamon (optional)

Pecan Pie Layer

  • 1 cup chopped pecans

  • 1 cup brown sugar

  • ½ cup light corn syrup

  • ⅓ cup butter

  • 2 eggs, lightly beaten

  • 1 tsp vanilla extract

  • Pinch of salt

Cheesecake Filling

  • 3 (8-oz) packages cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

  • ¼ cup heavy cream (or milk)

Topping (optional but amazing!)

  • Extra toasted pecans

  • Warm caramel sauce

  • Whipped cream


INSTRUCTIONS

1. Make the Crust

  1. Preheat oven to 325°F (165°C).

  2. Mix graham crumbs, sugar, melted butter, and cinnamon.

  3. Press into the bottom of a 9-inch springform pan.

  4. Bake 8–10 minutes. Let cool.


2. Make the Pecan Pie Layer

  1. In a saucepan, combine brown sugar, corn syrup, and butter.

  2. Cook over medium heat until butter melts and mixture is smooth.

  3. Remove from heat and whisk in eggs, vanilla, and salt.

  4. Stir in chopped pecans.

  5. Pour the pecan mixture evenly over the cooled crust.

This creates a gooey pecan pie base beneath the cheesecake!


3. Prepare the Cheesecake Filling

  1. Beat the cream cheese until smooth.

  2. Add sugar and mix until creamy.

  3. Add eggs one at a time, mixing on low speed.

  4. Mix in vanilla, sour cream, and heavy cream until smooth.

  5. Pour gently over the pecan pie layer.


4. Bake the Cheesecake

  • Place the springform pan on a baking sheet (pecan layer can bubble).

  • Bake at 325°F for 55–70 minutes, until the center is mostly set and slightly jiggly.

  • Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.

  • Chill in the refrigerator at least 4 hours, preferably overnight.


5. Add Toppings

Before serving, top with:

  • Toasted pecans

  • A drizzle of caramel sauce

  • Optional whipped cream


Tips for Perfect Results

  • Use room-temperature cream cheese for a smooth filling.

  • Don’t overmix after adding eggs — prevents cracking.

  • Chill fully for the perfect slice.
