Ooey Gooey Bars (Gooey Butter Bars)
Ingredients
Crust
- 1 box yellow cake mix
- ½ cup (1 stick) unsalted butter, melted
- 1 large egg
Filling
- 8 oz cream cheese, softened
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (1 stick) unsalted butter, melted
- 3¾–4 cups powdered sugar (adjust for gooeyness)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Make the crust:
Mix cake mix, melted butter, and egg until combined. Press evenly into the bottom of the pan. - Make the filling:
Beat cream cheese until smooth. Add eggs, vanilla, and melted butter; mix well. Gradually beat in powdered sugar until smooth and thick. - Assemble:
Pour filling over the crust and spread evenly. - Bake for 35–45 minutes.
The edges should be set, but the center should still jiggle slightly. - Cool completely before slicing (important for that gooey texture!).
Tips & Variations
- Extra gooey: Use closer to 3¾ cups powdered sugar and slightly underbake.
- Chocolate version: Use chocolate cake mix for the crust.
- Lemon: Lemon cake mix + add 1–2 tbsp lemon juice to the filling.
- Pumpkin spice: Spice cake mix + ½ cup pumpkin purée + 1 tsp pumpkin spice in filling.
