🍋 Classic Lemon Cake Recipe

Ingredients

For the cake:

  • 1 ½ cups (190 g) all-purpose flour

  • 1 cup (200 g) granulated sugar

  • ½ cup (115 g) unsalted butter, softened

  • 2 large eggs

  • ½ cup (120 ml) milk

  • 2 lemons – zest + 3 tbsp juice

  • 1 ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp vanilla extract

For the lemon glaze:

  • 1 cup (120 g) powdered sugar

  • 2–3 tbsp lemon juice


Instructions

  1. Prep

    • Preheat oven to 350°F (175°C).

    • Grease a loaf pan or round cake pan and line with parchment (optional but recommended).

  2. Make the batter

    • Cream butter and sugar until light and fluffy.

    • Add eggs one at a time, mixing well.

    • Mix in vanilla, lemon zest, and lemon juice.

    • In another bowl, whisk flour, baking powder, and salt.

    • Add the dry ingredients to the wet mixture alternately with the milk. Mix until just combined.

  3. Bake

    • Pour into prepared pan.

    • Bake 40–50 minutes, or until a toothpick comes out clean.

  4. Glaze

    • Whisk powdered sugar with lemon juice until smooth.

    • Pour over warm cake so it soaks in.

  5. Cool & serve

    • Let cool, slice, and enjoy!
