Green olive dip

Here’s a simple, flavorful green olive dip you can whip up in minutes—great with pita, crackers, grilled veggies, or as a sandwich spread.

🫒 Green Olive Dip (Mediterranean-style)

Ingredients

  • 1 cup green olives, pitted (Castelvetrano are excellent)
  • 1–2 cloves garlic
  • 2–3 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice (or red wine vinegar)
  • 1–2 tbsp capers (optional, but adds depth)
  • 1–2 tbsp fresh parsley or cilantro
  • ½ tsp dried oregano or cumin
  • Black pepper to taste
  • Optional: pinch of chili flakes or a small green chili

Instructions

  1. Add everything to a food processor.
  2. Pulse until chunky or smooth—your choice.
  3. Taste and adjust lemon, oil, or seasoning.
  4. Chill 15–30 minutes for best flavor.

Serve with

  • Warm pita or flatbread
  • Crackers or crostini
  • Grilled fish or chicken
  • Spread inside wraps or sandwiches

Variations

  • Creamy version: Blend in 2–3 tbsp Greek yogurt or labneh
  • Nutty version: Add 2 tbsp toasted almonds or walnuts
  • Middle Eastern twist: Add ½ tsp ground coriander + a drizzle of olive oil on top
