Ingredients

For the sausage gravy

  • 1 lb breakfast sausage (mild, medium, or hot)
  • 1/3 cup all-purpose flour
  • 3 cups whole milk
  • ½–1 tsp black pepper (to taste)
  • ½ tsp salt (adjust as needed)
  • Optional: pinch of crushed red pepper or smoked paprika

For the casserole

  • 1 (30–32 oz) bag frozen shredded hashbrowns (thawed)
  • 1 can (16 oz) refrigerated biscuits (like Pillsbury Grands, cut into quarters)
  • 8 large eggs
  • 1 cup shredded cheddar
  • 1 cup shredded mozzarella (or more cheddar)
  • 1 cup milk or half-and-half
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

1. Make the sausage gravy

  1. Brown the sausage in a large skillet over medium heat; do not drain unless there’s excess grease.
  2. Sprinkle the flour over the sausage. Stir and cook 1–2 minutes.
  3. Slowly pour in the milk, stirring constantly.
  4. Continue cooking until thickened, 5–7 minutes.
  5. Season with salt and pepper.
    → The gravy should be thick so it doesn’t make the casserole soggy.

2. Prepare the casserole base

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. Spread thawed hashbrowns evenly across the dish.
  3. Scatter the biscuit pieces over the hashbrowns.

3. Add eggs and cheese

  1. In a bowl, whisk together eggs, 1 cup milk/half-and-half, salt, pepper, garlic powder, and onion powder.
  2. Pour evenly over the biscuit/hashbrown mixture.
  3. Sprinkle cheddar and mozzarella cheese on top.

4. Pour on the gravy

  • Carefully spoon the sausage gravy evenly across the top.
    (It will look like a lot—this is good!)

5. Bake

  • Bake 45–55 minutes, until the center is set, biscuits are cooked through, and the edges are lightly golden.
  • Let rest 10 minutes before serving for easier slicing.

  • Serve with fruit, scrambled eggs, or a simple green salad for balance.
