Here’s a simple, flavorful way to make slow cooker pork chops that come out tender and juicy every time:


Ingredients (for 4 servings)

  • 4 boneless or bone-in pork chops (about 1-inch thick)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (optional)
  • 1 tablespoon olive oil (for browning, optional but recommended)
  • 1 cup chicken broth
  • 1 onion, thinly sliced
  • 2–3 cloves garlic, minced
  • 1/2 cup sour cream (optional, for creamy sauce)
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Season the pork chops
    • Pat the pork chops dry and season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  2. Optional: Sear for extra flavor
    • Heat olive oil in a skillet over medium-high heat.
    • Sear pork chops 2–3 minutes per side until golden brown. This step adds flavor but can be skipped if you’re short on time.
  3. Prepare the slow cooker
    • Place the sliced onions and garlic at the bottom of the slow cooker.
    • Lay the pork chops on top.
  4. Add liquid
    • Pour chicken broth around the pork chops (not directly on top to avoid washing off seasoning).
  5. Cook low and slow
    • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until pork chops are tender.
  6. Optional creamy sauce
    • Remove pork chops and cover to keep warm.
    • If you want a creamy sauce:
      • Mix 1 tablespoon cornstarch with 2 tablespoons cold water.
      • Stir into the slow cooker along with 1/2 cup sour cream.
      • Cook on HIGH for 10–15 minutes until thickened.
  7. Serve
    • Pour sauce over pork chops and enjoy with mashed potatoes, rice, or vegetables.

  • Thicker pork chops hold up better in a slow cooker; thin chops can dry out.
  • You can add sliced mushrooms, carrots, or apples for extra flavor.
  • Avoid overcooking—slow cookers vary, so check tenderness toward the end.
