White Chocolate Raspberry Cheesecake Balls

Here’s a gorgeous, easy, no-bake dessert: White Chocolate Raspberry Cheesecake Balls.
They’re creamy, fruity, and coated in smooth white chocolate — perfect for parties, gifts, or a quick sweet treat!


🍓🍫 White Chocolate Raspberry Cheesecake Balls

Ingredients (makes ~20–24 balls)

Cheesecake Filling

  • 8 oz cream cheese, softened

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • ¾ cup crushed graham crackers (or vanilla wafer crumbs)

  • ½ cup raspberries (fresh or thawed frozen)
    – Pat dry VERY well to avoid excess moisture

Coating

  • 12 oz white chocolate melting wafers or almond bark

  • Optional: pink sanding sugar, extra drizzled white chocolate, or freeze-dried raspberry crumbs


⭐ Instructions

1. Make the cheesecake dough

  1. In a bowl, beat cream cheese + powdered sugar + vanilla until smooth and creamy.

  2. Stir in graham cracker crumbs.

  3. Gently fold in the raspberries, lightly breaking them so they swirl through the mixture.

  4. Freeze dough 20–30 minutes until firm enough to roll.


2. Roll into balls

  1. Scoop about 1 tablespoon of mixture and roll into balls.

  2. Place on a parchment-lined baking sheet.

  3. Freeze 30–45 minutes so they don’t fall apart when dipped.


3. Melt the white chocolate

  1. Microwave melting wafers in 20–30 second bursts, stirring until smooth.

  2. Do NOT overheat or it will seize.


4. Dip the cheesecake balls

  1. Using a fork or dipping tool, dip each ball in the melted white chocolate.

  2. Let excess drip off.

  3. Place back onto parchment.


5. Decorate (optional)

While the coating is still wet, add:

  • Freeze-dried raspberry dust

  • Crushed graham

  • Sprinkles

  • A drizzle of pink-tinted white chocolate


6. Chill

Refrigerate at least 20 minutes to set completely.


⭐ Tips for Perfect Texture

  • Dry raspberries well — too much juice makes the dough soft.

  • Freeze balls before dipping so they stay firm.

  • Store in the fridge for up to 5 days or freeze for 2 months.

  • For extra raspberry flavor, add 2 tbsp crushed freeze-dried raspberries to the filling.
