Here’s a hearty, comforting vegetable soup—easy, healthy, and full of flavor 🥕🥔🍅

Classic Vegetable Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 zucchini, chopped (optional)
  • 1 cup green beans, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried thyme or Italian seasoning
  • 1 bay leaf

Optional add-ins

  • Corn, peas, cabbage, spinach, kale
  • Beans (kidney, white, chickpeas)
  • Pasta or rice

Instructions

  1. Sauté aromatics
    • Heat olive oil in a large pot over medium heat.
    • Add onion and cook 3–4 minutes until soft.
    • Add garlic and cook 30 seconds.
  2. Build flavor
    • Add carrots, celery, potatoes, and green beans.
    • Cook 5 minutes, stirring occasionally.
  3. Simmer
    • Add diced tomatoes, broth, seasoning, and bay leaf.
    • Bring to a boil, then reduce heat and simmer 25–30 minutes until vegetables are tender.
  4. Finish
    • Remove bay leaf.
    • Taste and adjust seasoning.
    • Add leafy greens or cooked pasta in the last 5 minutes.

Serving ideas

  • Crusty bread or grilled cheese
  • Sprinkle of parmesan
  • Drizzle of olive oil
