Ingredients (Makes ~20–24 turtles)
- 1½ cups pecan halves
- 1 bag soft caramels (about 11 oz) OR homemade caramel
- 2–3 tbsp heavy cream (only if melting wrapped caramels)
- 1½ cups chocolate chips (milk, dark, or semi-sweet)
- Sea salt (optional but delicious)
Instructions
1. Toast the Pecans (Optional but recommended)
- Spread pecan halves on a baking sheet.
- Bake at 350°F (175°C) for 6–8 minutes, until fragrant.
- Let cool.
2. Arrange the “Turtle Legs”
- Line a tray with parchment.
- Make little clusters of 3–4 pecans, like spokes, forming the turtle shape.
3. Melt the Caramel
- In a microwave-safe bowl, melt caramels + heavy cream in 20–30 second increments, stirring until smooth.

4. Spoon Caramel Over the Pecans
- Drop about 1 teaspoon of caramel onto each pecan cluster.
- Let it cool and firm up for 10–15 minutes.
5. Add the Chocolate
- Melt chocolate in the microwave (20-second bursts) or over a double boiler.
- Spoon or drizzle a dollop of chocolate over each caramel top.
6. Finish
- Sprinkle lightly with sea salt (optional).
