Posted on January 11, 2026 by Admin

Here’s a fresh, flavorful recipe for Teriyaki Chicken Lettuce Wraps—savory-sweet chicken, crisp veggies, and crisp lettuce cups 🥬🍗

Teriyaki Chicken Lettuce Wraps

Serves: 4

Ingredients

For the Chicken Filling

  • 1 lb boneless, skinless chicken breast or thighs, finely diced
  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup finely diced bell peppers (any color)
  • 1 cup shredded carrots
  • 1/4 cup chopped water chestnuts (optional for crunch)

Teriyaki Sauce

  • 1/4 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch + 2 tbsp water (for thickening)
  • 1/2 tsp fresh ginger, grated (optional)

For Serving

  • 8–12 large lettuce leaves (Butter, Bibb, or Romaine work best)
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

Instructions

1. Prepare Teriyaki Sauce

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and ginger.
  2. In a separate small bowl, mix cornstarch and water to make a slurry. Set aside.

2. Cook the Chicken

  1. Heat oil in a skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through, 5–6 minutes. Remove and set aside.

3. Cook Vegetables

  1. In the same skillet, sauté onion, bell pepper, and carrots 3–4 minutes until softened.
  2. Add water chestnuts if using.

4. Combine Chicken and Sauce

  1. Return chicken to the skillet.
  2. Pour teriyaki sauce over chicken and veggies.
  3. Stir in cornstarch slurry and cook 1–2 minutes until sauce thickens and coats the chicken.

5. Assemble Lettuce Wraps

  1. Spoon chicken mixture into lettuce leaves.
  2. Garnish with sesame seeds and green onions.
  3. Serve immediately.

Variations

  • Spicy: Add Sriracha or red pepper flakes to the sauce
  • Low-carb: Serve over shredded cabbage or zucchini noodles instead of rice (if desired)
  • Crunchy: Add chopped peanuts or cashews
  • Vegetarian: Replace chicken with diced tofu or tempeh

💡 Pro Tips

  • Use small, sturdy lettuce leaves for easy wrapping.
  • Don’t overcook the chicken—it will dry out in small pieces.
  • Sauce thickens quickly; add cornstarch slurry gradually to reach desired consistency.

If you want, I can also give a slow-cooker teriyaki chicken lettuce wraps version that’s easy for meal prep and keeps the chicken super tender.

Do you want me to do that?
