Strawberry Shortcake Cheesecake Cake

Ingredients

Cheesecake Layer

  • 2 (8 oz) blocks cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Cake Layers

  • 1 box vanilla or white cake mix
  • Ingredients listed on cake mix box (eggs, oil, water)

Strawberry Filling

  • 2 cups fresh strawberries, diced
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Whipped Topping / Frosting

  • 1 (8 oz) tub whipped topping (Cool Whip), thawed
  • 1½ cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Optional Garnish

  • Strawberry shortcake crumbs (crushed golden Oreos + butter)
  • Sliced strawberries

Instructions


1. Make the Cheesecake Layer

  1. Preheat oven to 325°F (165°C).
  2. Beat cream cheese and sugar until smooth.
  3. Add eggs one at a time, then vanilla.
  4. Pour into a greased 9-inch round pan lined with parchment.
  5. Bake 35–40 minutes until set.
  6. Cool completely, then refrigerate at least 2 hours.

2. Bake the Cake Layers

  1. Prepare cake batter according to package directions.
  2. Bake in two greased 9-inch round pans.
  3. Cool completely.

3. Make Strawberry Filling

  1. In a saucepan, combine strawberries, sugar, cornstarch, and lemon juice.
  2. Cook over medium heat until thick and glossy (5–7 minutes).
  3. Cool completely.

4. Make Whipped Frosting

  1. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Gently fold in whipped topping.

5. Assemble the Cake

  1. Place one cake layer on serving plate.
  2. Spread a thin layer of whipped frosting.
  3. Top with cheesecake layer.
  4. Spread strawberry filling evenly over cheesecake.
  5. Add second cake layer.
  6. Frost entire cake with whipped frosting.

6. Chill & Serve

  • Refrigerate at least 2–4 hours before slicing.
  • Garnish with strawberries or shortcake crumbs.

  • No-bake shortcut: Use a no-bake cheesecake layer
  • Strawberry crunch version: Add crunchy topping between layers
  • Cupcake version: Assemble in jumbo cupcake liners
  • Extra strawberry: Mix diced strawberries into frosting
