🥩 Steak Fajitas

Ingredients (Serves 4–6)

For the steak & marinade:

  • 1½ lbs flank steak or skirt steak
  • 3 tbsp olive oil
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper

For the veggies:

  • 1 large onion, sliced
  • 2–3 bell peppers (mixed colors), sliced
  • 1 tbsp oil
  • Pinch salt

For serving:

  • Warm flour or corn tortillas
  • Sour cream
  • Guacamole
  • Salsa or pico de gallo
  • Fresh cilantro
  • Lime wedges

Instructions

1️⃣ Marinate the steak

  • Whisk together olive oil, lime juice, garlic, and spices.
  • Place steak in a zip-top bag or dish and coat well.
  • Marinate at least 30 minutes, up to 8 hours (longer = more flavor).

2️⃣ Cook the veggies

  • Heat 1 tbsp oil in a large skillet over medium-high heat.
  • Add onions and peppers.
  • Cook 5–7 minutes until slightly charred but still crisp-tender.
  • Remove from skillet and set aside.

3️⃣ Cook the steak

  • In the same hot skillet (or grill), cook steak 3–5 minutes per side depending on thickness (medium-rare is ideal).
  • Remove and let rest 5–10 minutes.

4️⃣ Slice & combine

  • Slice steak against the grain into thin strips.
  • Return to skillet with veggies and toss together briefly.

5️⃣ Serve

  • Spoon into warm tortillas.
  • Add your favorite toppings and a squeeze of fresh lime.

  • Don’t overcrowd the pan — cook in batches if needed.
  • High heat = better char and flavor.
  • Let the meat rest before slicing to keep it juicy.
  • For smoky flavor, grill instead of skillet.
