Ingredients

  • 1 sheet puff pastry (thawed but still cold)
  • 1 tbsp olive oil or butter

  • 2 cups fresh spinach (or 1 cup frozen, thawed & well-drained)
  • Β½ cup ricotta cheese (or cream cheese for richer flavor)
  • Β½ cup feta, crumbled (or use shredded mozzarella/cheddar)
  • 1 egg (for egg wash + optional in filling)
  • Salt & pepper to taste
  • Pinch of nutmeg (optional but great with spinach)

Instructions

1. Make the filling

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and cook until soft (optional step).
  3. Add garlic; cook 30 seconds.
  4. Add spinach and cook until wilted (or warm frozen spinach).
  5. Remove from heat and cool slightly.
  6. In a bowl, mix:
    • spinach mixture
    • ricotta
    • feta
    • salt & pepper
    • Optional: 1 beaten egg for a creamier filling
      Add nutmeg if using.

2. Prep the pastry

  1. Preheat oven to 400Β°F (200Β°C).
  2. Unfold puff pastry on a lightly floured surface.
  3. Cut into 9–12 squares (depending on size you want).

3. Fill and fold

  • Spoon 1–2 tablespoons of filling onto each square.
  • You can:
    • Fold into triangles and seal edges with a fork, or
    • Leave as open squares and place filling in the center.
  • Brush edges (or tops) with egg wash (1 egg beaten with a splash of water).

4. Bake

  • Place on parchment-lined baking sheet.
  • Bake 15–20 minutes, or until golden and puffed.
