- ¾–1 cup (180–240ml) buttermilk (start with ¾ cup)
Optional Garlic Butter Topping
- 2 tbsp melted butter
- ½ tsp garlic powder
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Mix dry ingredients
In a large bowl, whisk together flour, baking powder, baking soda, salt, cayenne, and paprika. - Cut in butter
Add cold butter cubes. Use a pastry cutter or your fingers to work it into the flour until the mixture looks like coarse crumbs. - Add cheese & jalapeño
Stir in shredded cheese and jalapeño. - Add buttermilk
Pour in ¾ cup buttermilk and mix gently. Add more only if needed—the dough should be slightly sticky but not wet. - Shape biscuits
Drop heaping spoonfuls onto the baking sheet (for rustic drop biscuits)
