Ingredients
- 1 lb smoked sausage (kielbasa or similar), sliced
- 4–5 medium potatoes, diced (Yukon gold or red work best)
- 1 small onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika (smoked paprika is great if you have it)
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- Optional add-ins: bell peppers, broccoli, carrots
- Optional topping: shredded cheddar or mozzarella
Instructions
- Preheat oven to 400°F (200°C).
- Prep potatoes: If they’re large, cut them into small cubes so they cook evenly.
- Mix everything in a large bowl: potatoes, sausage, onion, olive oil, and seasonings.
- Spread evenly in a greased baking dish or sheet pan.
- Cover with foil and bake for 30 minutes.
- Remove foil, stir, and bake another 15–20 minutes until potatoes are tender and lightly crispy.
- Optional cheese: Sprinkle cheese on top and bake 5 more minutes until melted.
