Smoked Sausage and Potato Bake

Here’s an easy, hearty Smoked Sausage and Potato Bake 🥔🌭
Great for weeknights and very customizable.

Ingredients

  • 1 lb smoked sausage (kielbasa or similar), sliced
  • 4–5 medium potatoes, diced (Yukon gold or red work best)
  • 1 small onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked paprika is great if you have it)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • Optional add-ins: bell peppers, broccoli, carrots
  • Optional topping: shredded cheddar or mozzarella

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prep potatoes: If they’re large, cut them into small cubes so they cook evenly.
  3. Mix everything in a large bowl: potatoes, sausage, onion, olive oil, and seasonings.
  4. Spread evenly in a greased baking dish or sheet pan.
  5. Cover with foil and bake for 30 minutes.
  6. Remove foil, stir, and bake another 15–20 minutes until potatoes are tender and lightly crispy.
  7. Optional cheese: Sprinkle cheese on top and bake 5 more minutes until melted.

Tips & Variations

  • Want it crispy? Broil for the last 2–3 minutes.
  • Add a splash of chicken broth before baking for softer potatoes.
  • Serve with sour cream, mustard, or a side salad.
  • Works great in an air fryer too (375°F for ~20 minutes, shaking halfway).
