Ingredients

  • 4–5 medium potatoes, peeled and sliced into ½-inch rounds

  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried herbs (thyme, rosemary, or oregano)
  • ¼ cup vegetable or chicken broth (optional for extra moisture)

Instructions

  1. Prepare the vegetables:
    • Peel and slice potatoes
    • Slice onions thinly
    • Mince garlic if using
  2. Layer in the slow cooker:
    • Lightly grease the slow cooker
    • Add a layer of potatoes, then onions
    • Sprinkle salt, pepper, and herbs
