Here’s a hearty, Tex-Mex–style Slow Cooker Pinto Beans with Green Chiles and Beef recipe. It’s rich, comforting, and perfect for busy days — the slow cooker does almost all the work!


🍲 Slow Cooker Pinto Beans, Green Chile, and Beef

Cook Time: 6–8 hours

🛒 Ingredients

For the Beans & Beef

  • 1 lb dried pinto beans, rinsed (no soaking needed, but optional)
  • 1 lb ground beef (or 1–1½ lbs chuck roast, cubed)
  • 1 medium onion, diced
  • 3–4 garlic cloves, minced
  • 2 (4 oz) cans chopped green chiles or 1 cup roasted Hatch chiles
  • 1 can (14.5 oz) diced tomatoes (optional but great for richness)
  • 1–2 jalapeños or serranos, minced (optional for heat)
  • 6 cups beef broth (or water + 2 bouillon cubes)
  • 1½ tsp salt, more to taste
  • 1 tsp black pepper
  • 1½ tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • ½ tsp smoked paprika (optional)
  • 1 bay leaf

Optional Add-Ins

  • ½–1 cup chopped cilantro
  • 1 tsp apple cider vinegar or lime juice (brightens flavor at the end)

👩‍🍳 Instructions

1. Brown the Beef (Recommended for best flavor)

  1. In a skillet, cook ground beef over medium-high heat until browned.
  2. Add diced onion and garlic; cook 2–3 minutes until softened.
  3. Drain excess fat if needed.
  4. Transfer to the slow cooker.

If using chuck roast: brown the cubes in oil for deeper flavor.


2. Load Everything Into the Slow Cooker

Add to the slow cooker:

  • Pinto beans
  • Green chiles
  • Tomatoes (if using)
  • Jalapeños (if using)
  • Spices (salt, pepper, cumin, chili powder, oregano, paprika)
  • Bay leaf
  • Beef broth

Stir to combine.


3. Slow Cook

Cook on:

  • LOW for 7–9 hours (best texture)
  • or HIGH for 4–5 hours

Beans should be tender and creamy; beef should be melt-in-your-mouth soft.


4. Finish & Adjust

  • Remove bay leaf.
  • Stir in cilantro and vinegar/lime juice if using.
  • Taste and adjust salt (beans absorb a LOT).

🍽️ Serve With

  • Warm flour or corn tortillas
  • Cheese & sour cream
  • Rice
  • Chopped onions & jalapeños
  • Pico de gallo
  • Cornbread
  • As a filling for burritos or tostadas

  • Thicker stew: mash ½ cup of beans and stir back in.
  • Spicier version: use Hatch green chiles or add chipotle.
  • Healthier option: use ground turkey or leave out meat entirely.
