🍁🐖 Slow Cooker Maple Dijon Pork Loin

This slow cooker pork loin is tender, slightly sweet, and tangy from the maple syrup and Dijon mustard. It’s an easy set-and-forget meal that creates a delicious sauce while it cooks.


🛒 Ingredients (Serves 4–6)

  • 2–3 lb pork loin
  • ⅓ cup Maple syrup
  • ¼ cup Dijon mustard
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • ½ tsp black pepper
  • ½ tsp dried thyme (optional)
  • 1 tbsp olive oil (optional for searing)

🥣 Instructions

1️⃣ Optional: Sear the pork
Heat olive oil in a skillet and brown the pork loin on all sides (2–3 minutes each side). This step adds extra flavor but can be skipped.

2️⃣ Make the sauce
In a bowl mix:

  • maple syrup
  • Dijon mustard
  • soy sauce
  • garlic
  • black pepper
  • thyme

3️⃣ Add to slow cooker
Place pork loin in the slow cooker and pour the maple Dijon sauce over it.

4️⃣ Cook

  • Low: 6–7 hours
  • High: 3–4 hours

Cook until the pork is tender and reaches about 145°F (63°C) internally.

5️⃣ Serve
Slice the pork and spoon the maple Dijon sauce over the top.

  • Rice or mashed potatoes

💡 Tips

  • Add baby potatoes and carrots to the slow cooker for a full meal.
  • For thicker sauce: remove the liquid, simmer it in a pan for 5–10 minutes, or add a cornstarch slurry.
  • Leftovers make great sandwiches the next day.
