Slow cooker Irish potatoes

Here’s a simple, classic slow cooker Irish potatoes recipe—comforting, buttery, and perfect as a side dish ☘️

Slow Cooker Irish Potatoes

Ingredients

  • 2–2½ lb potatoes (Yukon Gold or red potatoes work best)
  • 3–4 tbsp butter, cut into pieces
  • ½ cup chicken or vegetable broth (or water)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 2 cloves garlic, minced (optional)
  • 1–2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Prep potatoes
    Wash and scrub the potatoes. Cut into large chunks (or leave small potatoes whole).
  2. Add to slow cooker
    Place potatoes in the slow cooker. Sprinkle with salt, pepper, and garlic if using.
  3. Add liquid & butter
    Pour broth over the potatoes and scatter butter on top.
  4. Cook
    • Low: 6–7 hours
    • High: 3–4 hours
      Potatoes should be fork-tender.
  5. Finish & serve
    Gently stir to coat potatoes in the buttery sauce. Sprinkle with parsley before serving.

Optional Irish-style twists

  • Creamy mash: Mash lightly in the slow cooker and stir in ¼–½ cup warm cream or milk.
  • Colcannon-style: Stir in sautéed cabbage or kale and a little extra butter.
  • Herbed: Add thyme or rosemary for more depth.
