Here’s a rich, creamy slow cooker chicken with cream cheese & Parmesan — super easy and great over pasta, rice, or veggies.


🍗 Slow Cooker Cream Cheese Parmesan Chicken

Serves 4

Ingredients

  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 8 oz cream cheese (block, softened)
  • ½–1 cup grated Parmesan
  • 3–4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • ½ tsp salt (adjust — Parmesan is salty)
  • ½ cup chicken broth
  • Optional: 1 cup heavy cream (extra creamy), spinach, mushrooms, red pepper flakes

Instructions

  1. Add chicken to slow cooker.
  2. Sprinkle with garlic, Italian seasoning, salt, and pepper.
  3. Pour in chicken broth.
  4. Place cream cheese on top (don’t stir yet).
  5. Cook on LOW 5–6 hours or HIGH 3–4 hours, until chicken is tender (165°F internal temp).
  6. Shred chicken in the cooker.
  7. Stir in Parmesan (and heavy cream if using) until smooth and creamy.
  8. Add spinach or mushrooms in the last 20–30 minutes if desired.

🍽 Serve Over

  • Fettuccine or penne
  • Rice
  • Mashed potatoes
  • Zucchini noodles
  • Toasted hoagie rolls (great as a sandwich filling)

  • Stir in cooked bacon
  • Splash of lemon juice to brighten
