🥣 Slow Cooker Creamed Corn Chicken
Ingredients
-
4 boneless, skinless chicken breasts
-
1 can (15 oz) cream-style corn
-
1 packet ranch seasoning mix (or 1 tbsp homemade ranch seasoning)
-
½ cup shredded cheddar cheese (optional, for topping)
-
Salt & pepper to taste
-
Optional: 1/2 tsp garlic powder or smoked paprika for extra flavor
Instructions
-
Prepare the slow cooker: Spray the inside lightly with cooking spray.
-
Layer the chicken: Place chicken breasts in the bottom of the slow cooker and season lightly with salt, pepper, and optional spices.
-
Add the corn: Pour cream-style corn over the chicken, then sprinkle the ranch seasoning on top.
-
Cook: Cover and cook on low for 4–5 hours or high for 2–3 hours, until the chicken reaches 165°F internally.
-
Add cheese (optional): In the last 10–15 minutes of cooking, sprinkle shredded cheddar cheese on top to melt.
-
Serve: Spoon over rice, mashed potatoes, or pasta for a creamy, comforting meal.
💡 Tips:
-
You can stir in a small can of diced green chiles or a few slices of cooked bacon for extra flavor.
-
If you like it extra creamy, stir in ½ cup of sour cream just before serving.
If you want, I can also make a version with vegetables included so it’s all-in-one slow cooker comfort food. Do you want me to do that?
