Slow cooker chicken and corn recipe

Here’s a simple and tasty slow cooker chicken with cream-style corn recipe that’s almost dump-and-go.


🥣 Slow Cooker Creamed Corn Chicken

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 can (15 oz) cream-style corn

  • 1 packet ranch seasoning mix (or 1 tbsp homemade ranch seasoning)

  • ½ cup shredded cheddar cheese (optional, for topping)

  • Salt & pepper to taste

  • Optional: 1/2 tsp garlic powder or smoked paprika for extra flavor


Instructions

  1. Prepare the slow cooker: Spray the inside lightly with cooking spray.

  2. Layer the chicken: Place chicken breasts in the bottom of the slow cooker and season lightly with salt, pepper, and optional spices.

  3. Add the corn: Pour cream-style corn over the chicken, then sprinkle the ranch seasoning on top.

  4. Cook: Cover and cook on low for 4–5 hours or high for 2–3 hours, until the chicken reaches 165°F internally.

  5. Add cheese (optional): In the last 10–15 minutes of cooking, sprinkle shredded cheddar cheese on top to melt.

  6. Serve: Spoon over rice, mashed potatoes, or pasta for a creamy, comforting meal.


💡 Tips:

  • You can stir in a small can of diced green chiles or a few slices of cooked bacon for extra flavor.

  • If you like it extra creamy, stir in ½ cup of sour cream just before serving.
