Here’s a classic, no-fail Slow Cooker Beef Stew—rich, cozy, and perfect for set-it-and-forget-it days 🍲


Slow Cooker Beef Stew

Ingredients

  • 2 lbs beef chuck, cut into 1½-inch cubes
  • 3–4 carrots, sliced
  • 3 potatoes, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 tbsp flour or cornstarch (for thickening, optional)

Instructions

  1. Layer the slow cooker
    Add beef, carrots, potatoes, onion, and garlic to the slow cooker.
  2. Mix the sauce
    Whisk beef broth, tomato paste, Worcestershire, salt, pepper, paprika, and thyme.
  3. Pour & cook
    Pour sauce over ingredients. Cover and cook:

    • LOW: 7–8 hours
    • HIGH: 4–5 hours
  4. Thicken (optional)
    Mix flour or cornstarch with a little water. Stir in during last 30 minutes.
  5. Serve hot
    Taste and adjust seasoning.

Tips for Best Flavor

  • Browning the beef first adds flavor (optional but great)
  • Cut veggies chunky so they don’t turn mushy
  • Even better the next day

Variations

  • 🍄 Add mushrooms in the last hour
  • 🌿 Fresh rosemary or bay leaf for depth
  • 🍷 Splash of red wine for richness
