🍳 Skillet Chicken with Cauliflower & Cheese

Ingredients

  • 2–3 boneless, skinless chicken breasts, cut into bite-size pieces

  • Salt & black pepper, to taste

  • 1 teaspoon garlic powder

  • ½ teaspoon paprika

  • 1 tablespoon olive oil

  • 3 cups cauliflower florets (fresh or frozen)

  • ½ cup chicken broth

  • ½ cup heavy cream (or milk for lighter)

  • 1½ cups shredded cheddar cheese

  • ¼ cup grated Parmesan cheese

  • Optional: chopped parsley or green onions


Instructions

  1. Season chicken with salt, pepper, garlic powder, and paprika.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Cook chicken until golden and cooked through, about 5–7 minutes. Remove and set aside.

  4. In the same skillet, add cauliflower and chicken broth.

  5. Cover and cook 5–6 minutes, until cauliflower is tender.

  6. Lower heat to medium-low. Stir in cream, then add cheddar and Parmesan a little at a time until melted and smooth.

  7. Return chicken to skillet and stir until well coated.

  8. Simmer 2–3 minutes, then garnish and serve.
