Ingredients (Serves 4)

For the Chicken

  • 1 Β½ lbs chicken breast or thighs, thinly sliced
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp oil

Vegetables

  • 2 bell peppers (red + green), sliced
  • 1 small onion, sliced
  • 3–4 garlic cloves, minced
  • Optional: 1 cup snap peas or broccoli

Garlic Stir-Fry Sauce

  • ΒΌ cup soy sauce
  • 3 tbsp oyster sauce
  • 1 tbsp rice vinegar (or white vinegar)
  • 2 tbsp brown sugar or honey
  • 1 tsp sesame oil
  • Β½ cup chicken broth
  • 2 tsp cornstarch

For Serving

  • Hot steamed rice
  • Sesame seeds (optional)
  • Green onions (optional)

⭐ Instructions

1. Marinate the chicken

In a bowl, combine:

  • Sliced chicken
  • Soy sauce
  • Cornstarch
  • 1 tbsp oil

Let sit 10–15 minutes (makes the chicken velvety and tender).


2. Mix the sauce

In another bowl, whisk together:

  • Soy sauce
  • Oyster sauce
  • Vinegar
  • Brown sugar
  • Sesame oil
  • Chicken broth
  • Cornstarch

Set aside.


3. Sear the chicken

  1. Heat a large skillet or wok over high heat.
  2. Add 1–2 tbsp oil.
  3. Spread chicken in a single layer; cook 3–4 minutes until browned.
  4. Remove chicken from the skillet.

4. Stir-fry vegetables

  1. Add a little more oil if needed.
  2. Stir-fry bell peppers & onions 2–3 minutes.
  3. Add garlic and stir until fragrant (30 seconds).

5. Combine & simmer

  1. Return chicken to the skillet.
  2. Pour in the garlic sauce.
  3. Stir and simmer on medium-high until the sauce thickens and becomes glossy (2–3 minutes).

6. Serve

Spoon the sizzling chicken and peppers over steaming hot rice.
Garnish with:

  • Sliced green onions
  • Sesame seeds
  • Extra drizzle of sesame oil
