Shepherd’s pie

Here’s a classic, hearty, homestyle Shepherd’s Pie recipe — rich meat filling topped with creamy mashed potatoes and baked until golden. Note: Traditional shepherd’s pie uses lamb; if you prefer beef, that’s technically cottage pie — I can give that version too!


🥘 Classic Shepherd’s Pie (Traditional with Lamb)

Ingredients

For the meat filling

  • 1½ lbs ground lamb
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup beef or vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp salt (more to taste)
  • ½ tsp black pepper
  • 2 tbsp flour (optional, to thicken)
  • 2 tbsp butter or oil

For the mashed potato topping

  • 2 lbs potatoes (Yukon gold or russet), peeled and cubed
  • 4 tbsp butter
  • ½–¾ cup milk or cream
  • Salt & pepper, to taste
  • Optional: ½ cup shredded cheddar or Parmesan
  • Optional: 1 egg yolk (for extra golden topping)

🥣 Instructions

1. Make the mashed potatoes

  1. Boil potatoes in salted water until tender (about 15 minutes).
  2. Drain, mash, and mix in butter, milk/cream, salt, and pepper.
  3. Add cheese or egg yolk if using.
  4. Set aside.

2. Make the meat filling

  1. Heat butter/oil in a skillet over medium heat.
  2. Add onion and carrots; cook until softened (5–6 minutes).
  3. Add garlic; cook 30 seconds.
  4. Add ground lamb and cook until browned, breaking it up.
  5. Stir in tomato paste and flour; cook 1 minute.
  6. Add Worcestershire, thyme, rosemary, broth, salt, and pepper.
  7. Simmer 5–10 minutes until thickened.
  8. Stir in peas last.

3. Assemble

  1. Spread the meat mixture evenly in a baking dish (8×8 or 9×13 depending on thickness).
  2. Spoon mashed potatoes over the top and smooth.
  3. Use a fork to create ridges (they brown beautifully).

4. Bake

Bake at 400°F (200°C) for 20–25 minutes, or until:

  • potatoes are golden
  • filling is bubbling around edges

Let rest 10 minutes before serving.


⭐ Tips & Variations

Beef version (Cottage Pie)

Swap lamb for ground beef and follow recipe the same way.

Creamier potatoes

Add sour cream or cream cheese to the mash.

Crispy top

Brush potatoes with melted butter or broil for the last 2 minutes.

Veggie add-ins

Mushrooms, corn, celery, or parsnip all work great.

One-pan skillet version

Make the filling in an oven-safe pan, top with potatoes, and bake — fewer dishes!
