Savory Meatloaf

Ingredients (for meatloaf)

  • 1½ lbs ground beef (can mix with ½ lb ground pork or turkey for flavor)
  • 1 cup breadcrumbs
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or Italian seasoning
  • Optional: ½ cup grated carrot or bell pepper for extra moisture

Topping

  • ¼ cup ketchup, BBQ sauce, or a mix

Instructions (Meatloaf)

  1. Preheat oven to 350°F (175°C).
  2. Prepare mixture: In a large bowl, combine all meatloaf ingredients except topping. Mix gently until combined.
  3. Shape: Form into a loaf and place in a greased 9×5-inch loaf pan (or shape on a baking sheet).
  4. Add topping: Spread ketchup or BBQ sauce evenly on top.
  5. Bake: 55–65 minutes, or until internal temperature reaches 160°F (71°C).
  6. Rest: Let meatloaf rest 10 minutes before slicing.

Caramelized Onion Gravy

Ingredients

  • 2 medium onions, thinly sliced
  • 2 tbsp butter or oil
  • 1 tbsp flour
  • 1½ cups beef broth
  • Salt & pepper to taste
  • Optional: splash of Worcestershire sauce or soy sauce

Instructions (Gravy)

  1. Melt butter in a skillet over medium-low heat.
  2. Add onions and cook 15–20 minutes, stirring occasionally, until deep golden brown.
  3. Sprinkle flour over onions and stir 1–2 minutes to cook flour.
  4. Gradually add beef broth, whisking to prevent lumps.
  5. Simmer 5–10 minutes until thickened.
  6. Season with salt, pepper, and optional Worcestershire sauce.

Tips

  • Use a mix of meats (beef/pork/turkey) for a more tender meatloaf.
  • Avoid overmixing meat—keeps it juicy.
  • For extra flavor, add a handful of chopped fresh herbs (parsley, thyme) to the meat.
  • Gravy can be made ahead and reheated while meatloaf rests.
