Sausage and peppers

Here’s a classic, flavorful Sausage and Peppers recipe—simple, hearty, and perfect on its own or piled into a hoagie roll.


🌶️🥩 Sausage and Peppers

Ingredients

  • 1½ lbs Italian sausage (sweet or hot)
  • 2 tbsp olive oil
  • 3 bell peppers (red, green, yellow), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • Optional: ½ cup marinara sauce or crushed tomatoes

Instructions

  1. Brown the sausage
    • Heat 1 tbsp oil in a large skillet over medium heat.
    • Brown sausages on all sides (about 6–8 minutes).
    • Remove and set aside.
  2. Cook peppers & onions
    • Add remaining oil to the skillet.
    • Sauté peppers and onion until softened and lightly caramelized (8–10 minutes).
    • Add garlic and Italian seasoning; cook 30 seconds.
  3. Combine
    • Slice sausages into chunks or return whole to the pan.
    • Add marinara if using.
    • Simmer 10–15 minutes until sausage is cooked through.
  4. Serve
    • Taste and adjust seasoning.
    • Serve on hoagie rolls, over rice, or with potatoes.

Tips & Variations

  • Oven method: Bake everything at 400°F for 35–40 minutes, stirring once.
  • Spicy: Use hot sausage or add crushed red pepper.
  • Low-carb: Skip the sauce and serve with cauliflower rice.
  • Meal prep: Keeps well for 3–4 days refrigerated.
