Rustic No Knead Rosemary Garlic Bread

Here is a perfect Rustic No-Knead Rosemary Garlic Bread — crunchy crust, soft chewy center, and HUGE flavor with almost no effort. You only need a bowl, a spoon, and a Dutch oven (or heavy oven-safe pot).


🍞 Rustic No-Knead Rosemary Garlic Bread

Prep: 5 minutes
Rise: 8–12 hours
Bake: 45 minutes
Makes: 1 artisan loaf


Ingredients

  • 3 cups all-purpose flour (or bread flour)
  • 1 ½ tsp salt
  • ½ tsp instant yeast (or active dry yeast)
  • 1 ½ cups warm water
  • 2–3 cloves garlic, minced or roasted
  • 1–2 tbsp fresh rosemary, chopped (or 2 tsp dried)
  • Optional: 1–2 tbsp olive oil for extra flavor
  • Optional: extra rosemary + flaky salt for topping

⭐ Instructions

1. Mix the Dough

  1. In a large bowl, combine flour, salt, and yeast.
  2. Add warm water and stir with a spoon until a shaggy, sticky dough forms.
  3. Stir in garlic and rosemary.
  4. Cover bowl tightly with plastic wrap or a towel.
  5. Let rise 8–12 hours at room temperature (overnight is ideal).
    • Dough will be bubbly and doubled in size.

2. Shape the Dough (No Kneading!)

  1. Sprinkle flour on your counter and your hands.
  2. Turn dough out and gently shape into a ball—don’t overwork it.
  3. Place the dough on parchment paper, seam side down.
  4. Let rest 30 minutes while the oven preheats.

3. Preheat Your Dutch Oven

  • Place a Dutch oven (or heavy pot with lid) into the oven.
  • Preheat to 450°F (230°C) for 30 minutes.

4. Bake

  1. Carefully place the dough (on the parchment) into the hot pot.
  2. Cover and bake 30 minutes.
  3. Remove lid and bake another 12–15 minutes until deep golden and crispy.

5. Cool & Serve

  • Let cool at least 30 minutes before slicing—this keeps it fluffy inside.
  • Sprinkle with extra rosemary or flaky salt if desired.

  • Roasted Garlic Version: Use a whole head of roasted garlic—dreamy and sweet.
  • Rosemary Olive: Add chopped olives for Mediterranean flavor.
  • Cheesy Crust: Add Parmesan on top before baking uncovered.
  • Everything Seasoning: Coat the top for a bakery-style loaf.
