Rotel Cream Cheese Sausage Balls

Ohhh yes — these are dangerously good and always disappear first 😄
Here’s a tried-and-true version:


Rotel Cream Cheese Sausage Balls 🧀🌶️

Ingredients

  • 1 lb breakfast sausage (mild or hot — your call)
  • 8 oz cream cheese, softened
  • 1 (10 oz) can Rotel tomatoes & green chilies, well drained
  • 2 cups Bisquick (or other baking mix)
  • 2 cups shredded cheddar cheese (sharp is best)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix it up
    In a large bowl, combine sausage and cream cheese until well blended.
  3. Add flavor
    Stir in drained Rotel and shredded cheese.
  4. Bind it
    Mix in Bisquick until fully combined. (Hands work best here.)
  5. Roll
    Shape into 1-inch balls and place on the baking sheet.
  6. Bake
    Bake for 20–25 minutes, until golden and cooked through.
  7. Serve warm — or try not to eat them straight off the pan 😅

Tips for Perfection

  • Drain Rotel REALLY well or they’ll be soft.
  • If the mix feels sticky, chill it for 10 minutes before rolling.
  • Great for freezing — bake straight from frozen, just add a few minutes.

Easy Variations

  • 🔥 Extra heat: use Hot Rotel + spicy sausage
  • 🧄 More flavor: add ½ tsp garlic powder or onion powder
  • 🧀 Swap cheese: pepper jack or Colby-Jack work great
