Ingredients

  • 4–5 medium potatoes (Yukon Gold or Russet work well)
  • 2–3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika or chili flakes (optional)
  • Fresh herbs like rosemary or parsley (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wash and cut the potatoes into cubes or wedges. You can peel them or leave the skin on.
  3. Soak (optional but recommended): Put the cut potatoes in cold water for 15–20 minutes to remove excess starch. This helps them get crispier.
  4. Dry them well with a towel.
  5. Season: Toss the potatoes with olive oil, salt, pepper, and any spices you like.
  6. Spread on a baking tray in a single layer (don’t overcrowd).
  7. Roast for 35–45 minutes, flipping halfway through, until golden brown and crispy.

  • Add a little cornstarch (½ tsp) before roasting for extra crunch.
