Pouring condensed cream of chicken soup over raw sliced russet potatoes is the base of a very easy casserole often called creamy potato bake or poor man’s scalloped potatoes. It turns into a rich, creamy side dish while baking. 🥔🥘

Simple Creamy Potato Casserole

Ingredients

  • 4–5 russet potatoes, thinly sliced
  • 1 can condensed cream of chicken soup
  • ½ cup milk (optional, to thin the soup)
  • 1 small onion, sliced (optional)
  • 1 cup shredded cheese (cheddar works well)
  • Salt and pepper to taste
  • 1 tbsp butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. Layer the potatoes in the dish. Add onions if using.
  4. Mix soup and milk in a bowl until smooth.
  5. Pour the soup mixture evenly over the potatoes.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, add cheese on top, and bake another 15–20 minutes until potatoes are tender and the top is golden.

Tips

  • Slice potatoes very thin so they cook evenly.
  • Add cooked bacon bits or ham for extra flavor.
  • Sprinkle paprika or parsley on top before serving.
