Potato Corn Chowder with Bacon

Ingredients (Serves 4–6)

  • 4–5 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3–4 medium potatoes, peeled and diced (Yukon Gold or Russet)
  • 2 cups corn kernels (fresh or frozen)
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half for a lighter chowder)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional, for extra smokiness)
  • 2 tablespoons butter (optional, for extra richness)

Instructions

  1. Cook the bacon
    • In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy.
    • Remove bacon and place on a paper-towel lined plate.
    • Keep about 1–2 tbsp of the bacon fat in the pot. (Keto Flavour)
  2. Sauté the aromatics
    • Add the diced onion to the bacon fat and cook for 3–4 minutes until soft.

  3. Simmer the potatoes and corn
    • Add the diced potatoes, corn, and broth.
