Pot roast with carrots and potatoes

Here’s a classic, melt-in-your-mouth pot roast with tender carrots and potatoes — cozy, comforting, and perfect for Sunday dinner. Works in the oven, slow cooker, or Instant Pot (I’ll include all versions!).


🥩 Classic Pot Roast with Carrots & Potatoes

Serves: 6–8
Prep: 15 minutes
Cook: 3–4 hours (oven)


Ingredients

  • 3–4 lb chuck roast (best for tenderness)

  • 1 tbsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 2 tbsp olive oil

  • 1 large onion, sliced

  • 4 cloves garlic, smashed

  • 4–5 large carrots, cut into chunks

  • 1 ½ lbs baby potatoes or quartered gold potatoes

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 2–3 sprigs fresh thyme or 1 tsp dried

  • 1–2 bay leaves (optional)


🔥 OVEN METHOD (most flavorful)

1. Preheat Oven

  • Preheat to 300°F (150°C).

2. Season & Sear the Roast

  1. Pat roast dry and season all sides with salt, pepper, and garlic powder.

  2. Heat olive oil in a large Dutch oven over medium-high heat.

  3. Sear roast 3–4 minutes per side until deeply browned.

  4. Remove roast and set aside.

3. Sauté Aromatics

  • Add onions and garlic to the pot; cook 2–3 minutes to soften.

4. Add Liquids & Veggies

  1. Place roast back into pot.

  2. Add beef broth and Worcestershire.

  3. Add carrots, potatoes, thyme, and bay leaves around the roast.

5. Cook Low & Slow

  • Cover with lid and bake 3–4 hours, or until fall-apart tender.

6. Serve

  • Discard thyme stems and bay leaves.

  • Serve roast with the veggies and spoon pan juices over everything.


🐢 SLOW COOKER METHOD

  1. Sear roast first (optional but recommended).

  2. Add everything to the slow cooker.

  3. Cook on LOW 8–10 hours or HIGH 5–6 hours.


⚡ INSTANT POT METHOD

  1. Use Sauté mode to brown the meat.

  2. Add onions, garlic, broth, Worcestershire.

  3. Pressure cook 60–70 minutes.

  4. Natural release 15 minutes.

  5. Add carrots and potatoes; cook an additional 8–10 minutes high pressure.


⭐ Tips for the BEST Pot Roast

  • Chuck roast gives the most tender results.

  • Sear the meat well — flavor booster.

  • For extra richness, add 1 tbsp tomato paste before adding broth.

  • Add ½ cup red wine if you want a deeper flavor.

  • Don’t overcook the veggies in the slow cooker; add halfway if you like firmer.
