Ingredients

  • 2–3 lb (900–1350 g) boneless pork loin
  • 2–3 apples, sliced (Granny Smith or Honeycrisp work well)
  • 2 tbsp olive oil
  • 3–4 sprigs fresh rosemary (or 1 tsp dried)
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • ½ cup chicken broth or apple cider
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season the pork: Rub pork loin with olive oil, salt, pepper, minced garlic, and rosemary.
  3. Sear the pork (optional): In a skillet over medium-high heat, sear all sides until golden (adds extra flavor).
  4. Arrange in roasting pan: Place onions and apple slices in the pan, then lay the pork on top.
  5. Add liquid: Pour chicken broth or apple cider around the pork (not over the top, to keep the seasoning intact).
  6. Roast: Bake for 50–70 minutes, until internal temperature reaches 145°F (63°C).
  7. Rest the meat: Let pork rest 10 minutes before slicing.
  8. Serve: Arrange apple slices around pork, spoon pan juices over the top.
