Poor Man’s Husband Casserole

Ingredients

For the meat mixture:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced (optional)

  • Salt & pepper to taste

  • 1 teaspoon Italian seasoning (or a mix of basil & oregano)

  • 1 jar (24 oz) spaghetti sauce OR 2 cups tomato sauce

For the casserole layers:

  • 8 oz egg noodles (or any pasta you have)

  • 1 cup sour cream

  • 8 oz cream cheese, softened

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese


Instructions

1. Cook the noodles

  • Boil egg noodles according to package directions.

  • Drain and set aside.

2. Prepare the beef filling

  1. In a skillet, cook ground beef with onion (and garlic if using) until browned.

  2. Drain grease.

  3. Season with salt, pepper, and Italian seasoning.

  4. Stir in the spaghetti/tomato sauce and let simmer 5 minutes.

3. Prepare the creamy layer

  • Mix cream cheese + sour cream together in a bowl until smooth.

4. Assemble the casserole

Preheat oven to 350°F (175°C).
Grease a 9×13 baking dish.

Layer in this order:

  1. Half the cooked noodles

  2. Cream cheese mixture (spread gently)

  3. Remaining noodles

  4. Meat sauce

  5. Cheddar + mozzarella on top

5. Bake

  • Bake uncovered for 25–30 minutes, until hot and bubbly and cheese is melted.


Serve With

  • Garlic bread

  • Side salad

  • Steamed veggies


Optional Add-Ins

  • A pinch of red pepper flakes for heat

  • Add sliced mushrooms or bell peppers to the meat

  • Use cottage cheese instead of sour cream for extra protein

  • Swap beef for ground turkey for a lighter version
