Pineapple Quick Bread

Here’s a simple, moist, and delicious Pineapple Quick Bread recipe! It’s easy to mix by hand and turns out beautifully sweet with lots of tropical flavor.


🍍 Pineapple Quick Bread

Ingredients

Dry

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon (optional but recommended)

Wet

  • 2 large eggs

  • 1 tsp vanilla extract

  • ⅓ cup vegetable oil (or melted butter)

  • 1 (20-oz) can crushed pineapple with juice

  • ½ cup chopped nuts (optional — walnuts or pecans work great)

  • ½ cup shredded coconut (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.

  2. Mix dry ingredients: In a large bowl whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon.

  3. Mix wet ingredients: In another bowl whisk the eggs, vanilla, and oil. Stir in the crushed pineapple with its juice.

  4. Combine: Add wet ingredients to dry and mix just until combined. Fold in nuts or coconut if using.

  5. Bake: Pour batter into the loaf pan. Bake 55–70 minutes, or until a toothpick comes out clean.

  6. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a rack to cool completely.


Tips

  • Sweeter bread? Add 2–3 tbsp brown sugar or drizzle with a simple glaze (powdered sugar + pineapple juice).

  • Moisture level: Pineapple juice amounts can vary—if your batter seems too thick, add 2–3 tbsp more juice or milk.

  • Mix-ins: Raisins, dried cranberries, or white chocolate chips all work well.
