Ingredients (serves 8–10)

Base:

  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1½ cups pecans, chopped

Cobbler Topping:

  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup milk
  • ½ cup granulated sugar

Instructions

1. Prep

  1. Preheat oven to 350°F (175°C).
  2. Melt butter and pour into a 9×13-inch baking dish.

2. Make the pecan filling

  1. In a bowl, whisk brown sugar, granulated sugar, corn syrup, eggs, vanilla, and salt.
  2. Stir in chopped pecans.
  3. Carefully pour mixture over melted butter—do not stir.

3. Make the topping

  1. Whisk flour, baking powder, salt, sugar, and milk until smooth.
  2. Spoon the batter evenly over the pecan mixture—again, don’t stir.

4. Bake

  • Bake uncovered for 40–45 minutes, until top is golden and center is set but gooey.

🍨 Serve

  • Let cool 10–15 minutes.
  • Serve warm with vanilla ice cream or whipped cream.
