Here’s a simple, reliable recipe for oven-baked chicken thighs that turns out juicy inside with crispy skin:


🔥 Ingredients

  • 4–6 chicken thighs (bone-in, skin-on works best)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika (smoked if you have it)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Optional: 1/2 tsp dried thyme or oregano
  • Optional: lemon wedges for serving

🍗 Instructions

  1. Preheat oven
    Set to 220°C (425°F).
  2. Prep the chicken
    Pat the thighs dry with paper towels (this helps crisp the skin).
  3. Season
    Rub with olive oil, then coat evenly with all the spices.
  4. Arrange
    Place chicken thighs skin-side up on a baking tray or rack.
  5. Bake
    Cook for 35–45 minutes, until:

    • Skin is crispy and golden
    • Internal temp reaches 75°C (165°F)
  6. Optional crisp boost
    Broil/grill for 3–5 minutes at the end for extra crispiness.
  7. Rest & serve
    Let rest 5 minutes, squeeze lemon over if you like.

🍽️ Tips

  • Don’t overcrowd the tray—space = crispiness
  • Use a wire rack if possible so heat circulates
  • Add potatoes or carrots to the tray for a full meal

🌶️ Flavor Variations

  • Spicy: Add chili flakes or cayenne
  • Honey garlic: Brush with honey + garlic in last 10 min
  • BBQ: Coat with your favorite BBQ sauce near the end
