Onion Soup Pork Loin

Here’s a delicious way to combine pork loin with rich onion soup flavors. This is essentially a simple, hearty roast that’s perfect for weeknight dinners or special occasions.


Ingredients

  • 2–3 lb pork loin roast
  • 1 packet (about 1 oz) of onion soup mix (dry)
  • 1 can (10.5 oz) cream of mushroom soup (optional for extra creaminess)
  • 2 tbsp olive oil or melted butter
  • Salt and pepper to taste
  • Optional: garlic powder, paprika, or fresh herbs (rosemary, thyme)

Instructions

  1. Preheat Oven: 350°F (175°C).
  2. Prepare Pork: Pat the pork loin dry. Rub with olive oil, then sprinkle with salt, pepper, and any optional spices.
  3. Add Onion Soup Flavor: Place pork in a baking dish and pour the dry onion soup mix evenly over the pork. If using, spread cream of mushroom soup on top or around the roast.
  4. Bake: Cover with foil and bake for 1–1.5 hours (or until internal temperature reaches 145°F / 63°C). Remove foil for the last 15 minutes to brown the top.
  5. Rest & Serve: Let the pork rest 10 minutes before slicing. Serve with pan juices or onion soup gravy, mashed potatoes, or roasted vegetables.

Tips

  • For extra flavor, sear the pork in a skillet for 2–3 minutes per side before baking.
  • You can add sliced onions or carrots to the baking dish for a one-pan meal.
  • Leftovers make great sandwiches or stir-fries.
