Here’s a soft, hearty Oatmeal Muffin recipe — cozy, not dry, and perfect for breakfast or snacks 🧁🌾


Oatmeal Muffins

Ingredients

  • 1½ cups old-fashioned oats
  • 1 cup milk (any kind)
  • 1¼ cups all-purpose flour
  • ½ cup brown sugar (or white sugar)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 2 large eggs
  • ⅓ cup vegetable oil or melted butter
  • 1 tsp vanilla extract

Optional Add-Ins

  • ½ cup raisins or dried cranberries
  • ½ cup chopped apples or bananas
  • ¼ cup chopped nuts
  • ¼ cup chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line or grease a muffin tin.
  2. Mix oats and milk; let soak 10–15 minutes (softens oats).
  3. In a bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, whisk eggs, oil, and vanilla.
  5. Stir soaked oats into wet ingredients.
  6. Gently fold wet mixture into dry ingredients until just combined.
  7. Divide batter evenly into muffin cups.
  8. Bake 18–22 minutes, until tops spring back.
  9. Cool 5 minutes, then transfer to a rack.

Tips

  • 🌾 Use old-fashioned oats (not steel-cut).
  • 🧁 For bakery tops, sprinkle with cinnamon sugar before baking.
  • ❄️ Freeze well up to 3 months.

Variations

  • 🍌 Banana Oatmeal Muffins: add 1 mashed banana, reduce sugar by ¼ cup
  • 🥕 Morning Glory: add grated carrot, coconut, and nuts
  • 🥛 Healthier: use half whole-wheat flour or honey instead of sugar
