Here’s an easy, rich, No-Bake Chocolate Oatmeal Bars recipe — chewy, chocolatey, and ready in minutes!


🍫 No-Bake Chocolate Oatmeal Bars

Ingredients

Base Layer

  • 1 cup (230 g) unsalted butter
  • ½ cup (100 g) brown sugar
  • 1 tsp vanilla extract
  • 3 cups (270 g) old-fashioned rolled oats
  • ¼ tsp salt

Chocolate Layer

  • 1 cup (175 g) semisweet chocolate chips
  • ½ cup (125 g) creamy peanut butter (or almond butter / sunflower butter)

Instructions

  1. Prepare the pan
    Line an 8×8 or 9×9 inch pan with parchment paper.
  2. Make the oat mixture
    • In a medium pot, melt the butter and brown sugar over medium heat.
    • Stir until the sugar dissolves.
    • Add vanilla, salt, and oats.
    • Cook for 2–3 minutes, stirring so everything is well coated.
  3. Create the chocolate layer
    • In a microwave-safe bowl or over a double boiler, melt the chocolate chips with the peanut butter.
    • Stir until smooth.
  4. Assemble
    • Press half the oat mixture into the bottom of the lined pan.
    • Pour and spread the chocolate mixture on top.
    • Add the remaining oat mixture and press gently to form the top layer.
  5. Chill
    Refrigerate for 2–3 hours, or until fully set.
    Slice into bars and serve.

Tips & Variations

  • Add chopped nuts, coconut flakes, or dried fruit to the oats.
  • Use dark chocolate for a richer bar.
  • For firmer bars, add ¼ cup more oats; for softer bars, reduce oats slightly.
  • Make them vegan by using plant-based butter and dairy-free chocolate.
