“Mexican White Trash Casserole” is a name you’ll sometimes see online for a creamy, Tex-Mex style layered bake. The name can be considered offensive, so many people prefer calling it Mexican Layered Casserole or Cheesy Taco Casserole instead.
Here’s a popular version:
🌮 Cheesy Mexican Layered Casserole
Ingredients (serves 6–8)
- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
- 1 (15 oz) can whole kernel corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 2 cups shredded Mexican-blend cheese
- 1 (10.5 oz) can cream of chicken or cream of mushroom soup
- 1 cup sour cream
- 1 small onion, diced
- 1 bag (about 9–10 oz) crushed tortilla chips or Doritos
Instructions
- Preheat oven to 350°F (175°C).
- Cook the meat: Brown ground beef with onion. Drain grease. Stir in taco seasoning and diced tomatoes with chilies.
- Mix creamy layer: In a bowl, combine soup and sour cream.
- Layer in baking dish:
- Crushed chips (bottom layer)
- Meat mixture
- Corn + black beans
- Creamy mixture
- Cheese
- Repeat layers if desired, ending with cheese on top.
- Bake 25–30 minutes until bubbly and cheese is melted.
- Let rest 5–10 minutes before serving.
Optional Add-Ins
- Diced bell peppers
- Jalapeños for heat
- Green onions or cilantro on top
- Swap ground beef for shredded chicken
It’s creamy, cheesy, crunchy, and very crowd-friendly — perfect for potlucks or game nights.
If you’d like, I can also share a lighter version or a slow cooker version.
