Here’s a simple, crowd-pleasing recipe for Mediterranean Spinach and Feta Crisps—perfect as an appetizer or light snack 🫒

Ingredients

  • 1 cup fresh spinach, finely chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup cream cheese, softened
  • 1 clove garlic, minced
  • 1–2 tbsp olive oil
  • 1 tbsp fresh dill or parsley, chopped (optional)
  • ¼ tsp dried oregano
  • Freshly ground black pepper, to taste
  • 24–30 crackers, pita chips, or baguette slices

Instructions

  1. Prep the spinach
    Sauté the chopped spinach in a small pan with a little olive oil over medium heat until wilted (about 1–2 minutes). Let cool slightly, then squeeze out excess moisture.
  2. Make the topping
    In a bowl, mix spinach, feta, cream cheese, garlic, oregano, herbs, and black pepper until well combined.
  3. Assemble
    Preheat oven to 375°F (190°C).
    Arrange crackers or bread slices on a baking sheet and spoon the spinach–feta mixture evenly on top.
  4. Bake
    Bake for 10–12 minutes, or until the topping is warm and slightly golden.
  5. Serve
    Drizzle lightly with olive oil and garnish with extra herbs if desired. Serve warm.

Optional Variations

  • Add chopped sun-dried tomatoes or Kalamata olives for extra Mediterranean flavor
  • Sprinkle a little mozzarella or parmesan on top for a crispier finish
  • Use phyllo cups instead of crackers for an elegant party version
