Mediterranean Ground Beef Skillet

Here’s a simple, flavorful Mediterranean Ground Beef Skillet you can make in one pan 🍳

Ingredients

  • 1 lb ground beef

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp paprika

  • ½ tsp ground cumin

  • Salt & pepper, to taste

  • 1 cup cherry tomatoes, halved (or canned diced tomatoes, drained)

  • ½ cup roasted red peppers, sliced

  • ¼ cup Kalamata olives, sliced (optional)

  • 2 cups fresh spinach or chopped kale

  • ¼ cup crumbled feta cheese

  • Fresh parsley or basil (optional)

Instructions

  1. Heat oil in a large skillet over medium heat.

  2. Cook onion for 2–3 minutes until softened, then add garlic and cook 30 seconds.

  3. Brown the beef, breaking it apart, until fully cooked. Drain excess fat if needed.

  4. Season with oregano, paprika, cumin, salt, and pepper.

  5. Add tomatoes, roasted red peppers, and olives. Simmer 3–5 minutes.

  6. Stir in spinach and cook until just wilted.

  7. Finish with feta and fresh herbs. Serve warm.

Serving Ideas

  • Over rice, quinoa, or couscous

  • Stuffed into pita bread

  • On top of greens as a warm salad

  • With hummus or tzatziki on the side
