Ingredients (4 servings)
- 450 g (1 lb) ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp oregano
- ½ tsp cinnamon (optional but very Mediterranean)
- Salt & pepper
Add-ins
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, sliced
- ½ cup crumbled feta cheese
- 2 cups fresh spinach or kale
- Fresh parsley or dill, chopped
Instructions
1️⃣ Brown the beef
- Heat olive oil in a large skillet over medium heat.
- Add onion, cook 2–3 min until soft.
- Add garlic, cook 30 sec.
- Add ground beef, break it up, cook until browned.
- Season with paprika, cumin, oregano, cinnamon, salt & pepper.
2️⃣ Add veggies
- Stir in tomatoes and olives.
- Cook 2–3 minutes until tomatoes soften.
3️⃣ Finish
- Add spinach, cook just until wilted.
- Turn off heat.
- Sprinkle feta and fresh herbs.
