Meatloaf and potatoes

Classic comfort combo 😌
Here’s a simple, cozy meatloaf + potatoes setup you can make without overthinking it.

Classic Meatloaf (serves ~4)

You’ll need

  • 1–1¼ lb ground beef (or beef/pork mix)
  • 1 cup breadcrumbs or crushed crackers
  • 1 small onion, finely chopped
  • 1 egg
  • ½ cup milk
  • 2 tbsp ketchup (plus more for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt, ½ tsp pepper
  • Optional but great: garlic, paprika, parsley

How

  1. Heat oven to 375°F / 190°C.
  2. Mix everything gently (don’t overwork or it gets dense).
  3. Shape into a loaf in a pan or on a lined tray.
  4. Spread ketchup on top.
  5. Bake 50–60 min until cooked through. Rest 5–10 min before slicing.

Potatoes (pick your vibe)

Mashed (classic pairing)

  • Boil peeled potatoes in salted water until fork-tender.
  • Mash with butter, warm milk/cream, salt & pepper.
  • Optional upgrades: roasted garlic, sour cream, chives.

Roasted (crispy edges 😍)

  • Cube potatoes, toss with olive oil, salt, pepper.
  • Roast at 425°F / 220°C for 35–45 min, flipping once.
  • Add rosemary, thyme, or paprika if you’re feeling fancy.

Pro comfort tips

  • Add a little BBQ sauce or brown sugar to the meatloaf glaze for sweet-savory vibes.
  • Leftover meatloaf makes elite sandwiches the next day.
  • Gravy on the potatoes = no regrets.
